Ski holidays in Italy would be only half as much fun if there wouldn’t be the numerous inviting alpine ski cottages with their delicious culinary treats…

When on ski holidays in Italy’s South Tyrol, you will soon notice the many typical mountain cottages dotting the ski resorts. Stop by at one of them during your ski holidays in Italy’s Dolomites and sample local delicacies such as the traditional “kaspressknödel”. If you wish to recreate the atmosphere of ski holidays in Italy at home, we recommend you to try the following recipe: kaspressknödel!

Ingredients:
(for 4 persons, 8 dumplings)

  • 150 g of (white) diced bread 
  • 120 ml milk 
  • 100 g alpine cheese, diced 
  • 2 eggs 1 tbsp. white flour 
  • ½ small onions, diced 
  • Salt 
  • Pepper 
  • 1 tbsp. chives 
  • 1 tbsp. parsley 
  • 10 g butter 
  • 25 g clarified butter

Roast the onions in the butter. Place the bread cubes in a large bowl and mix with the milk, cheese, eggs, flour, the finely chopped chives and parsley and season according to taste. Use your hands to work the mass until smooth and even. Leave to rest for about 15 minutes and seize this time to plan your next ski holidays in Italy. Then shape round dumplings and flatten them out with your hand. In a pan heat up the clarified butter and bake the kaspressknödel at medium heat on both sides for about 5 minutes. Afterwards, dry off excessive butter with a kitchen paper and serve with cabbage salad or in a hearty broth.
